Welcome to Quayle’s Brewery

This brand new hop farm and estate brewery nestled in the northern portion of Oro-Medonte is earning rave reviews from its early guests. Offering a special farm-to-glass experience, the brewery features a seasonal artisanal food menu and a series of exceptional craft brews made with their own homegrown ingredients. Anchored by a gorgeous new three-storey barn surrounded by twelve acres of hops plants, this charming attraction is fast becoming popular with locals and tourists alike. The brewery has been wildly popular and even sold out some of its early beers by curbside pickup.

 

The journey to opening Quayle’s Brewery started about five years ago with the purchase of the farmland nestled in the rolling hills of Oro-Medonte. Hops were planted and the building was erected from the ground up. Now, the impressive property features a tasting room with fourteen taps, an acoustic lounge and a newly expanded 90-seat socially distanced outdoor patio with a seasonal menu. The brewery also has a spacious indoor/outdoor event space that will allow for future events. It features a full production system and small batch system allowing the head brewer to craft the finest beers. According to brewery staff, there’s something for all tastes in the range of craft brews offered here. The staff proudly serve up “everything from bright pilsners to hazy IPAs, approachable sours to creamy coffee porters.”

Opened in May 2020, the brewery first offered curbside pickup only, and has been steadily growing since. With a new seasonal menu offering dishes like Hawaiian pork bao, fish tacos, burgers and farm-fresh salads. The artisanal menu – which offers vegan and vegetarian options – features local ingredients designed to pair with twelve varieties of craft beers.

Emphasis on Local

Three of the four ingredients used to make Quayle’s beer come right from their farm. Their beer is brewed using their own spring water filled with naturally rich minerals, as well as their farm fresh hops and cultured yeast. According to co-founder Catherine Pearson, Quayle’s Brewery is now one of the largest hop farms in the province.  Quayle’s Brewery is dedicated to incorporating local ingredients wherever possible in their menu items and beers.

Catherine and her business partner Graydon Lau plan to make the brewery a gathering place for the community during all four seasons. The brewery has recently opened its indoor space for dining and beer tasting and when the time is right, they plan to hold various events in their spacious acoustic lounge, stylish loft space and outdoor green space. They were quick to point out that the place is family friendly, and dog friendly too!

 In Hops We Trust

 The journey to establish Quayle’s Brewery has been a long and challenging one for owner Catherine Pearson. Catherine’s husband and co-founder Brian J Pearson, who grew up in a neighbouring farm in Oro-Medonte and established the hop farm in 2015, passed away due to cancer in 2018. Brian had first envisioned Quayle’s as a place for friends and family to gather, enjoy each other’s company and taste exceptional fine craft beer and food for generations. Brian is dearly missed as his wife Catherine works to keep their dream alive.

COVID threw another major roadblock in Catherine’s way as the pandemic delayed the brewery’s opening plans.  Yet Catherine forged on: “We had come this far, we were not going to wait any longer and let a pandemic defeat us. We have been overwhelmed by all the support of our community. Everyone loves everything!”
